Happy Monday, guys!! I hope you all had a fun and relaxing weekend. Mine was spent brunching, lounging, grocery shopping and meal prepping… a good balance if I may say so myself!
As you can see from the title of those post, today’s post is about a staple of mine, cauliflower rice! Cauliflower is such a versatile vegetable and is a great source of Vitamins C and K. Cauliflower rice has become a popular food item lately and I constantly find myself looking for new ways to cook with it. I buy the frozen version from Trader Joe’s and have it for dinner at least once a week! It’s easy to cook with and since I’m all about EASY and FAST dinners, it’s a must-have for me.
Today I’m sharing some creative ways you can cook with it that don’t take long to prepare!

If you love having leftovers, on hand try making this Cauliflower Rice and Broccoli Casserole!
Or, try what I like to call my Cauliflower Rice “Risotto”. I make this every week (usually on Sunday nights!) Just mix 1 Trader Joe’s packet of cauliflower rice with two egg whites, any spices you want (basil, oregano, salt, pepper), pop the mixture into a pan, top with whatever you want (mushrooms, marinara, parmesan and chicken is my go-to!) and bake at 400F for 20-30 minutes. Once it comes out, it’s smooth, buttery and risotto like!

And for a super fast and easy meal, just stir fry cauliflower rice with spices, meat, vegetables and more! For this meal, I cooked my cauliflower rice on a pan with cumin, salt and turmeric and paired it with an egg omelette over a bed of arugula:
