Woohoo! We made it to Friday! Is it just me or are the weeks going by super slowly lately? This weekend, Dane and I are heading to a Fall festival followed by a Fall inspired dinner and Football– lots of F’s this weekend ahead, hah!

I’ve got some goodies that I’m loving this week, so I wanted to share them as I usually do on Fridays… So, let’s get it!

Pumpkin Spiced Pretzels

Oh my gosh- YUM! Dane and I found these at BevMo! in Oakland the other weekend and they are just melt-in-your-mouth fantastic! We can’t stop eating them!

Curried Carrot Cashew Dip

Guys, new Trader Joe’s find here! This is a brand new dip and it’s healthy and light. There’s a slight tang from the curry spices and a nice smooth texture with the carrot and cashew blend. We dipped carrot sticks into it and it was a perfect pairing– full of beta-carotene, hah!

Flavored Olive Oils

I’ve been into flavored olive oils lately for my veggies. The garlic flavored one is from Trader Joe’s and it’s great because it only contains garlic flavor, not actual garlic (I’m allergic!). The basil flavored one is delicious too! I’ve been using these everyday.

Super Easy Pizza Pancake

The other night, I didn’t have any fish or meat to cook, which is usually what I’ll make for weeknight dinners. I decided to whip up some mini pizzas for us that were incredibly easy to make. I just combined 60g of flour, 1/2 tbsp baking powder, 1 egg white, a dollop of greek yogurt, water, dried thyme, basil and salt and made them into two pizza “pancakes” cooked on my stove top. I topped mine with tomato sauce and feta and parmesan cheeses.

The Last of Summer Salads

I’m never going to say goodbye to salads for good, but something about big Whole Foods salads reminds me of summer. I grabbed one a few weekends ago while in the East Bay and it reminded me of summer picnic days. I put everything on this baby– lettuce, roasted veg, fresh veg, sweet potato chunks, chickpeas, berries and tofu!
