What I Ate Wednesday {My Week in Dinners}

After my vacation, I got re-inspired to cook more and make fun and delicious recipes! There are definitely those days, where I put together something simple, but I’m making it a goal to plan out recipes each week for dinner that are healthy and delicious. Last week, I made every meal I planned, so I’m sharing them today in case you’re in need of some dinner inspiration.

Healthy Dinner 1:

Main: Ginger-soy marinated swordfish with asian style veggies sautéed in smoked olive oil.

Salad: Arugula and kale mix with green beans, sliced tomatoes and cucumbers, sesame crusted cashews and fat free vinaigrette dressing.

Healthy Dinner 2:

Main: Basil and citrus marinated chicken breast with sautéed brussel sprouts and onions in smoked olive oil.

Salad: Arugula with green beans, slices tomatoes, sprinkle of parmesan, truffle flavored marcona almonds and fat free vinaigrette.

Healthy Dinner 3:

Main: Baked ground beef patties in tomato puree and parmesan with grilled zucchini and onions in smoked olive oil.

Salad: Butter lettuce and arugula with sliced tomatoes, cucumbers, green beans, blueberries and pecans with balsamic glaze.

Weekend Dinner Special:

I made this dinner on Saturday night while Dane I watched the Warrior’s game! We started with a cheese board featuring pecorino and blue cheeses, salami bites, olives, cucumber slices, pomegranate fruit spread and crackers on the side. We also had several glasses of wine on the side!

And for the main course, baked chicken with a bourbon, maple sauce we found (delicious!) with baked parsnip and brussel sprouts in smoked olive oil and salt.

I’ll be sharing more of the dinner recipes I come up with on the blog, but for now, I’ll be posting them on Instagram as I make them. If you’re stuck in a food rut, I encourage you to look around for recipe inspiration, make a meal plan and GO DO IT. It’s so easy to get stuck in the same rut and cycle, but how are you ever going to experience new things if you don’t break out of it? Make a conscious decision to change and just. do. it.
